That Was Easy

“That was easy. Can we do it again?”

A long time ago I was cooking and canning salsa with a dear pregnant relative. It was hot, hard work. I chopped the chiles, tomatoes, and onions, cooked the salsa, and sterilized the jars. I gave my helper the job of wiping the rims of the canning jars so they would seal. After a long day, we sat together admiring our handiwork. “That was easy,” she said with a smile of satisfaction. “Can we do it again?” And we did.

I love green chile chicken casserole. I’ve tried many times to roast and peel fresh chiles with no success. My cupboards have always stored emergency cans of green chile. Finally, after years of tossing scorched, tattered, unpeelable chiles, roasting and peeling clicked for me. Success!! That was easy. My fingers are tingling from the chile heat, and I am ready to do it again.

Thirty posts in thirty days seemed to be overly ambitious. My more common pace has been a blog every month or so. But the posting ‘rules’ said to post a picture if you can’t think of anything to write about. Then, write about the picture. Maybe I made that last part up. After all, that was easy. Let’s do it again!
